Simple Chicken Creole

4 servings @ 7 PPVs per serving

  

1 medium onion, chopped

one half cup chopped green pepper

one half cup celery, chopped

1 teaspoon minced garlic

2 (14.5 oz) cans diced tomatoes

1 teaspoon Cajun seasoning

one half teaspoon salt

one quarter teaspoon ground red pepper

2 bay leaves

16 oz skinless chicken breast, chopped

2 cups cooked brown rice

 

Sautee the first 4 ingredients in skillet sprayed with non-stick spray. Add chicken and cook until pieces are done. Stir in tomatoes and next 5 ingredients. Cover and reduce heat to low and cook, stirring occasionally, 20 minutes.  Remove and discard bay leaves.  Serve over 1/2 cup brown rice.
